I was dying for a little treat so I whipped up these maple cookies! Based on this recipe (https://alldayidreamaboutfood.com/maple-cream-sandwich-cookies-and-the-best-part/) but I don't want to waste calories on a cream filling, so these are more just shortbready singles. I substituted the 1/3 cup swerve for 1/4 cup stevia in the raw and added an extra 1/2tbsp of butter. They're not super sweet but I'm alright with that. Yielded 45. #realtalk I have been exposed to some really negative body image beliefs along the way, and it's super important to me that my #ketolife is in CELEBRATION of my body at every stage. I've wasted so many years wishing I was skinnier or focusing on my imperfections and guess what? Even if I'm perfect on my #lchf macros for a decade, I'll never be good enough if I can't love myself unconditionally now. #keto is a lifestyle and a way to keep my warped endocrine system functioning, and not for aesthetics. I am never going to have a "transformation" picture because I need to love this belly, these thighs, these cheeks, these curves, just as they are today. Today is good enough for today. And I'm going to be grateful for the bacon in my belly and the #bodypositivity in my heart.
The other day I stayed up way too late to prep some diy chicken tenders to have something to snack on. Butterflied and quartered three HUGE chicken breasts, egg wash, and dipped in a 3:1 almond/coconut flour blend. Baked at 425 for 25 mins turning once. Some were delish and some had the most TERRIBLE texture... They were cooked through but when I bit into it, the breast meat had this crunch, almost as if it was raw. So gross!!! Anyone else find this with those mammoth chicken breasts? Guess I'm a thigh girl 🐔🐔
